Braised Brussels Sprouts and Pears

8 ounces medium Brussels sprouts -- (1.25 to 1.5-inch)

2 tablespoons low-cholesterol margarine -- or butter

1/4 cup apple cider or juice -- or more if needed

2 pears

pinch cinnamon

 

1. Pull off any loose outer leaves of the sprouts and trim the stems; cut an X

in the bottom of each to allow for even cooking of core and leaves. Put the

sprouts in a saucepan with the margarine or butter and cider or juice. Bring to

a boil and simmer, covered for 5 minutes.

 

2. Meanwhile, peel and core the pears. Cut them into chunks roughly the size of

the sprouts (roughly 1 cup per pear). Add them to the saucepan with a pinch of

cinnamon and continue simmering another 5 to 7 minutes, until the sprouts and

bears are both tender.

 

3. Watch that the cider doesn't evaporate; if necessary, add a little more.

 

TIP - To make the dish with frozen sprouts, add the pears and cinnamon at the

beginning and cook only 5 to 7 minutes total time.
