Grilled Seitan with Nouveau Bearnaise Sauce

1 pound seitan -- cut into 1/2-inch-thick slices

1 teaspoon olive oil

Salt and freshly ground black pepper

1/2 cup dry white wine

1/4 cup minced shallots

2 tablespoons minced fresh tarragon leaves -- or 1 tablespoon dried

1 cup regular or soy mayonnaise

2 teaspoons fresh lemon juice

1 teaspoon Dijon mustard

Pinch cayenne

Pinch turmeric

 

Infused with the flavors of tarragon, shallots, and white wine, this

interpretation of the classic bearnaise sauce is the perfect complement to

grilled seitan steaks. The sauce also tastes great on grilled vegetables.

 

1 Preheat the grill. Rub the seitan on both sides with 1 tablespoon of the oil

and season with salt and

pepper. Grill the seitan, turning once, until rowned on both sides. Keep warm.

2 Meanwhile, place the wine, shallots, and tarragon in a small skillet over

medium-high heat and simmer

until the liquid reduces by half Transfer to a food processor or blender, add

the mayonnaise, lemon juice, mustard, cayenne, turmeric, and salt to taste, and

process until smooth. Taste to adjust the seasonings.

3 Divide the sauce among individual serving plates. Top with the grilled seitan

and serve at once.
