There are lots of things you can do with your leftover Hamburger Helper. The first thing that comes to mind is a frozen soy product made by one of the major brands -- Morningstar Farms I think -- that is just like crumbled hamburger but made out of TVP (textured vegetable protein). I've used it in a sloppy joe recipe and it was quite good. You can also buy the TVP plain and use that. Firm tofu could be sautéed and then incorporated in the mix, or use hearty mushrooms like portabella. You could also use just about any firm vegetable -- try steamed small potatoes and carrots or something. Hope this helps. Let us know what you end up doing!
