Guest guest Posted April 26, 2002 Report Share Posted April 26, 2002 * Exported from MasterCook * Greek Mushroom Orzo Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons Olive Oil 1 pound Fresh White Mushrooms -- sliced 1 1/4 cup Orzo uncooked -- (rice shaped pasta) 1 can Italian-style stewed tomatoes -- (14-1/2 ounce) 1 can vegetable broth -- (13-3/4 ounce) 1/4 cup Basil & Tomato flavored Feta Cheese -- crumbled In a large skillet over medium heat, heat oil until hot. Add mushroom; cook, stirring occasionally, until tender and mushrooms just release their liquid, about 6 minutes. Stir in orzo, tomatoes, chicken broth and 1/2 cup water. Simmer covered, stirring occasionally, until orzo is tender and most of the liquid is absorbed, about 9 minutes. Stir in Feta Cheese and serve immediately.
