Sweet and Sour Stir-Fry

1/3 cup ketchup

3 tablespoons vinegar

3 tablespoons brown sugar

1 tablespoon soy sauce

1 tablespoon cornstarch

pich cayenne

1 small onion -- chopped or thinly sliced into half-moons

2 garlic cloves -- crushed

2 cups sliced mushrooms

1 stalk celery -- thinly sliced

1 red bell pepper -- thinly sliced

1 medium zucchini -- thinly sliced

1 cup thinly sliced green cabbage

2 cups snow peas

3 cups cooked rice -- (3 to 4 cups) (1 cup uncooked)

 

Combine the ketchup, vinegar, brown sugar, soy sauce, cornstarch, cayenne, and

1/2 cup of water in a bowl. Stir to mix, then set aside.

 

In a large skillet or wok, heat 1/2 cup of water. Add the onion and garlic and

cook over high heat, stirring often, until the onion begins to soften, about 3

minutes.

 

Add the mushrooms and celery, cook 3 minutes, then add the bell pepper,

zucchini, and cabbage. Continue cooking over high heat, stirring continuously,

until the vegetables are just tender, about 3 more minutes.

 

Stir in the snow peas and sauce. Cook, stirring constantly, until the sauce is

clear and thickened, about 2 minutes. Serve with cooked rice.
