Hungarian Goulash

1 large onion

2 tablespoons soy sauce

3 cups sliced mushrooms

1 large red bell pepper -- diced

2 celery stalks -- sliced

3 tablespoons minced garlic -- (about 10 large cloves)

8 ounces seitan -- cut into slices OR 1 cup Harvest Burger for

recipes

1 jar water-packed roasted red peppers -- (12-ounce)

1/2 cup ketchup

2 tablespoons minced fresh basil -- or 2 teaspoons dried basil

1 teaspoon paprika

1/4 teaspoon black pepper

1 package fettucine, rotini, or other pasta

 

This is a perfect " make-ahead " recipe, as it is actually tastier the second day.

It is made with seitan ( " say-tan " ), a high-protein wheat product which has a

meaty taste and texture. Seitan is sold in natural food stores. If you are

unable to locate seitan, you can use a cup of Harvest Burger for Recipes in its

place.

 

Cut the onion in half, then into thin crescents. Heat 1/2 cup of water and the

soy sauce in a large skillet. Add the onion and cook over high heat, stirring

often, until the water has evaporated. Add an additional 1/2 cup of water, along

with the mushrooms, bell pepper, celery, and garlic. Continue cooking over

medium heat for 8 to 10 minutes, then stir in the sliced seitan (or Harvest

Burger for Recipes).

 

Use a food processor or blender to puree the roasted red peppers, including any

liquid. Add to the vegetables along with the ketchup, basil, paprika, pepper,

and 1 cup of water. Cover and simmer 10 minutes.

 

Cook the pasta in boiling water until it is tender. Rinse and drain, then spread

on a platter. Top with the goulash and serve.
