Hearty Chili Mac

8 ounces pasta spirals

1 onion -- chopped

3 garlic cloves -- minced

1 small red or green bell pepper -- diced

2 1/2 cups Harvest Burger for Recipes OR 4 Boca

Burgers, thawed and chopped

1 can crushed tomatoes -- (15-ounce)

1 can kidney beans -- (15-ounce) including liquid

1 can corn -- (15-ounce) including liquid

2 tablespoons chili powder

1 teaspoon ground cumin

1/4 teaspoon salt

 

The notion of combining pasta and chili was not my own, and in fact, I prepared

my first test batch with reluctance. So I was delightfully surprised when

everyone who tried it, myself included, responded with enthusiasm and requests

for seconds. I hope you, too, will enjoy this recipe.

 

Cook the pasta in boiling water until it is tender. Drain and rinse, then set it

aside.

 

Heat 1/2 cup of water in a large pot then add the chopped onion and garlic. Cook

until the onion is soft, about 5 minutes. Add the bell pepper and Harvest Burger

or chopped Boca Burgers. Mix in the crushed tomatoes, kidney beans, corn, chili.

powder, cumin, and salt. Cover and simmer over medium heat, stirring

occasionally, for 20 minutes. Add the cooked pasta and check the seasonings. Add

more chili. powder if a spicier dish is desired.
