Guest guest Posted April 25, 2002 Report Share Posted April 25, 2002 * Exported from MasterCook * Creamy Cucumber Dressing Recipe By : Fat-Free Holiday Recipes, by Sandra Woodruff, page 159 Serving Size : 28 Preparation Time :0:00 Categories : Salads, Dressings Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup dry curd or nonfat cottage cheese 1/4 cup nonfat or reduced-fat mayonnaise 1/4 cup white wine vinegar 2 tablespoons minced fresh parsley 2 tablespoons chopped scallions 2 cloves garlic 1/4 teaspoon ground white pepper 1/4 teaspoon salt 1 cup coarsely chopped cucumber -- peeled and seeded Yield: 1 3/4 cups 1. Place all of the ingredients except for the cucumber in a food processor or blender, and process until smooth. Add the cucumber, and process for a few seconds, just until the cucumbers are finely chopped. 2. Transfer the dressing to a small bowl, cover, and chill before serving.
