Guest guest Posted April 25, 2002 Report Share Posted April 25, 2002 * Exported from MasterCook * Adzuki Bean Salad with Tofu Recipe By :Delores Riccio Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 can adzuki beans -- (15-ounce) drained and rinsed* 1/2 cup chopped red onion 1 green bell pepper -- seeded and chopped 1 celery stak with leaves -- diced 1/2 cup seasoned rice vinegar** 1/2 teaspoon dried cilantro 1 cup diced firm tofu Superfoods: adzuki beans, tofu, red onion, green pepper * Available in specialty stores and whole-foods markets. **The " seasoning " is salt and sugar, so if you use unseasoned rice vinegar, add a pinch of each. Combine all ingredients except the tofu, and blend well. Gently stir in the tofu. Marinate at room temperature for 30 minutes or in the refrigerator for an hour or more. The salad can be made 1 day ahead. Keep refrigerated.
