Sweet 'n' Sour Cabbage

Amount Measure Ingredient -- Preparation Method

1 1/2 tablespoons olive oil

1 medium onion -- sliced into rounds

1/2 cup tomato sauce -- homemade or store-bought

1/4 cup red wine vinegar

2 tablespoons brown sugar

4 cups finely sliced green cabbage

2 tablespoons water -- (2 to 3) optional

Salt and cayenne pepper

 

SUPERFOODS: onion, tomato sauce, cabbage

 

Heat the olive oil in a large skillet, and saute the onion rounds until they

separate into rings and soften, about 5 minutes.

 

Add the tomato sauce, vinegar, and brown sugar, and simmer 2 to 3 minutes,

uncovered. Add the cabbage.

 

The recipe can be prepared to this point several hours ahead. Cool slightly;

refrigerate in the skillet, covered.

 

Toss the cabbage with the sauce, and add a little water if the mixture seems

dry. Cover and steam for 5 minutes or until the cabbage is just tender. Do not

overcook.

 

Add salt and cayenne pepper to taste. Serve immediately.
