Butternut and Lentil Soup with Chilies

2 tablespoons olive oil

1 large onion -- chopped

1 celery stalk with the leaves -- chopped

1 garlic clove -- minced

6 cups vegetable broth*

1 cup lentils -- picked over and rinsed

1 cup tomato sauce -- (an 8-ounce can)

4 cups peeled and diced butternut squash

1 can chopped mild green chiles -- (4-ounce)

1 teaspoon dried cilantro

1 teaspoon ground cumin

 

SUPERFOODS: onion, garlic, lentils, tomato sauce, butternut squash, chilies

 

You'll probably have a bonus of leftover soup, which can be served on i another

day or frozen for later use. Suggestions for reheating are included in the

recipe.

 

In a large pot, heat the oil and saute the onion, celery, and garlic until they

have softened, about 5 minutes. Add all the remaining ingredients.

 

Simmer the soup for about 1 hour, until the lentils are quite tender but the

squash still retains its shape, stirring occasionally, more often toward the end

of the cooking time. Taste to correct seasoning; you may want some salt,

depending on the broth you used.

 

The soup can be made 1 day ahead. Keep refrigerated. Reheat carefully because

thick soups tend to stick. A microwave takes the worry out of this procedure.

 

MAKES 2 1/2 QUARTS

 

*In a pinch, you can substitute 6 cups water and 4 bouillon cubes.
