Guest guest Posted April 22, 2002 Report Share Posted April 22, 2002 * Exported from MasterCook * Heaven And Earth Sauce Recipe By : The Cooking Cardiologist, by Richard Collins, page 189 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large sweet onions -- sliced and chopped 2 medium plums -- chopped 1 small jalapeno pepper -- chopped fine 2 tablespoons balsamic vinegar 1 tablespoon water apple juice -- frozen concentrate Serving Size: 6 Sauté onions and jalapeno pepper in apple juice until desired doneness, (add apple juice slowly to get onions nicely caramelized), add plums stirring and heating thoroughly. Season with salt and pepper to taste. Add balsamic vinegar and water, sauté a few minutes longer to get flavors to blend. Serve over grilled sliced tofu, grilled portabella mushrooms or sliced grilled sweet potatoes. Comment: nutritional analysis does not include tofu, portabella mushrooms or sweet potatoes.
