Guest guest Posted April 22, 2002 Report Share Posted April 22, 2002 * Exported from MasterCook * Suburban Style Baked Beans Recipe By : The Cooking Cardiologist, by Richard Collins, page 181 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Side Dishes Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup onions -- chopped fine 32 ounces canned pinto beans 6 slices Morningstar Farms Breakfast Strips -- cubed 2 tablespoons mustard 4 tablespoons brown sugar 1/2 teaspoon garlic powder 3 tablespoons tomato paste 3 tablespoons water 1/4 cup ketchup Serving Size: 6 In small microwave bowl with cover, microwave onions on high 3-4 minutes until tender. In mixing bowl combine beans, cubed breakfast strips, mustard, brown sugar, garlic powder, tomato paste, water and ketchup. Add onions. Blend well. Pour into a sprayed 1 quart casserole, cover and bake in 350 degree oven for 45 minutes. Hint: when using a small amount of tomato paste, the unused portion can be put in a small plastic bag and frozen. Comment: for variety use 1 can of light red kidney beans and 1 can of pinto beans.
