Caesar Revamped

Amount Measure Ingredient -- Preparation Method

4 lg cloves garlic -- cut in half

1 tbsp smooth Dijon Mustard

6 oz silken tofu

1/4 cup lemon juice -- from 1 lemon

1/2 tsp salt

1 pinch freshly ground black pepper

1 cup olive oil

1/2 cup Parmesan cheese -- grated

 

In a food processor or blender, puree the garlic, mustard, silken tofu and lemon

juice. Add the salt and pepper.

 

With the machine running, slowly add the olive oil, in a stream the width of a

pencil. When the dressing is fully emulsified, stir in the Parmesan cheese. The

dressing will keep in the refrigerator, covered, for up to a week.

 

Variation: Here is a vegan option: Pour boiling water over a 5 " piece of wakame

seaweed (available in whole-foods stores and Japanese markets), and let it soak

for 5 minutes. Drain the wakame, then chop it and add it to the food processor

before you add the oil. Omit the Parmesan cheese, and increase the salt to

taste.
