Southwest Coleslaw

Amount Measure Ingredient -- Preparation Method

4 cups cabbage - shredded

1/2 package firm Mori-Nu Lite Silken Tofu

6 slices mangos

6 slices papaya

4 tablespoons rice vinegar or to taste

salt and pepper -- to taste

 

Serving Size: 6

 

Place tofu, 4 slices mangos, 4 slices papaya and rice vinegar in food

processor, process until well blended. Pour mixture over shredded

cabbage. Garnish with the 2 additional chopped slices of mangos and papayas.
