Guest guest Posted April 23, 2002 Report Share Posted April 23, 2002 * Exported from MasterCook * Stir-Fried Asparagus with Tofu and Cashews Recipe By :Delores Riccio Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bunch thin asparagus -- (about 1 1/4 pounds) 2 tablespoons olive oil 1 garlic clove -- finely minced 1 tablespoon white wine or water 1 cup diced firm tofu 1/2 cup unsalted cashews A liberal sprinkling of freshly ground black pepper SUPERFOODS: asparagus, garlic, tofu, cashews A 10-minute dish that could be an agreeable luncheon entree at another time. Break off the tough ends from the asparagus stalks, and slice them on the diagonal into 2-inch pieces. Heat the oil and garlic in a large skillet or wok. Stir-fry the asparagus over medium-high heat until nearly tender-crisp, 3 to 5 minutes. Add the wine or water, and allow it to evaporate, about 1 minute, to finish cooking the asparagus. it should be slightly crunchy. Add the tofu and cashews, stir-frying until the cashews brown just slightly, 1 to 2 minutes. The dish may be made an hour or so ahead and rewarmed in the skillet. Sprinkle with pepper and serve.
