Hearty Tomato-Barley Soup

3 cups peeled tomatoes -- (fresh or canned) with their juices

2 cups vegetable broth -- reduced sodium

2 cups water

1/2 cup barley

2 carrots -- scraped and sliced

1 medium onion -- chopped

1 celery stalk -- chopped

1 garlic clove -- minced

1/2 teaspoon dried basil

1/2 teaspoon dried cilantro

1/2 teaspoon chili powder

1/4 teaspoon salt

1/4 teaspoon pepper

 

SUPERFOODS: tomatoes, barley, carrots, onion, celery, garlic

 

Combine all ingredients in a 3-quart saucepan, bring to a boil, and simmer over

low heat, with cover slightly ajar, for 45 to 55 minutes or until the barley is

tender. Stir often during the last 15 minutes.

 

If the soup seems too thick, thin it with broth or water. Simmer at least 5

minutes after adding liquid.

 

The soup can be made ahead and reheated. Keep refrigerated.
