Guest guest Posted April 22, 2002 Report Share Posted April 22, 2002 * Exported from MasterCook * Cheese Sauce Recipe By : The Cooking Cardiologist, by Richard Collins, page 187 Serving Size : 4 Preparation Time :0:00 Categories : Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup skim milk 1 tablespoon flour 1 teaspoon Dijon mustard 1 teaspoon Worcestershire sauce 3 drops Tabasco sauce 1 cup fat-free shredded cheddar cheese Serving Size: 4 Combine the milk, mustard, Worcestershire sauce and Tabasco sauce in a saucepan over moderately low heat until the mixture bubbles gently. Let the mixture simmer for 4 minutes, stirring constantly. Stir in the cheese, a little at a time, and cook sauce over moderately low heat for 4 minutes or until it is smooth. (Do not let the mixture boil.) Serve this over toast or steamed vegetables.
