I want to stock my freezer with quiches and thought some different crusts would be nice. Any other unusual pie crust recipes, preferably low-fat, would be greatly appreciated. This recipe comes from a 24-Hour Fitness health club listserv that I belong to. I know it's not a cornmeal, but it's quiche with a non-traditional crust! If you used a low-fat bread for the crust it might fit your needs. I haven't tried it yet but it looks good. I will search my recipie archives to see if I can find some low-fat cornmeal crusts for you. Since we are also talking about quiche, I would love some other low-fat quiche recipies if anyone has them to offer the list! Thanks, Cathi Artichoke Quiche 3 slices whole wheat bread 1 tablespoon olive oil 1 teaspoon dried thyme 1/4 teaspoon paprika 2 cups dry-curd cottage cheese 1/2 cup egg substitute 2 tablespoon grated Parmesan cheese 12 oz. cooked artichoke hearts (can be bottled but not packed in oil) Place bread in a blender or food processor and process into breadcrumbs. Transfer to a medium bowl. Add the oil, thyme and paprika and mix well. Press into the bottom and up the sides of a 9-inch pie plate. Bake at 400 degrees for 7 minutes. In a food processor puree the cottage cheese, egg substitute and Parmesan cheese. Transfer to a large bowl. Pat the artichokes dry with paper towels and cut into bit-size pieces. Stir artichokes into the cheese mixture and pour into the pie shell. Bake at 350 degrees for 30 minutes, or until an inserted knife comes out clean. To serve, cut into 8 slices.
