Guest guest Posted April 15, 2002 Report Share Posted April 15, 2002 * Exported from MasterCook * Spinach And Potato Galette Recipe By :Good for Your Heart Cookbook, Helen Middleton Serving Size : 6 Preparation Time :0:00 Categories : Potatoes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds potatoes -- large ones 1 pound fresh spinach 2 eggs 14 ounces lowfat cream cheese -- (1 3/4 cups) 1 tablespoon grainy mustard 3 tablespoons fresh herbs -- chopped (e.g. chives, parsley, chervil or sorrel) salt freshly ground pepper Preheat the oven to 350 degrees F. Line a deep 9 inch cake pan with parchment paper. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 10 minutes. Drain well and allow to cool slightly before peeling and slicing thinly Wash the spinach well and place in a large pot with only the water that is clinging to the leaves. Cover and cook, stirring once, until the spinach has just wilted. Drain well in a sieve and squeeze out the excess moisture. Chop finely. Beat the eggs with the cream cheese and mustard then stir in the chopped spinach and fresh herbs. Place a layer of the sliced potatoes in the lined pan, arranging them in concentric circles. Top with a spoonful of the cream cheese mixture and spread out. Continue layering, seasoning with salt and pepper as you go, until all the potatoes and the cream cheese, mixture are used up. Cover the pan with a piece of foil and place in a roasting pan. Fill the roasting pan with enough boiling water to come halfway up the sides, and cook in the oven for 45-50 minutes. Turn out onto a plate and serve hot or cold.
