Tangy Vegetable Pasta Salad

Amount Measure Ingredient -- Preparation Method

1/3 cup Low sodium vegetable juice

2 tablespoons Green onion

--chopped

1 tablespoon Vegetable oil

1/2 lemon juice

--(1/2 of 1 lemon)

1/2 lemon peel

--(1/2 of 1 lemon) grated

1 teaspoon Sugar

1/2 teaspoon Dried dill weed

1 1/2 cups dry spiral-shaped pasta

--cooked

3 medium Plum tomatoes

--sliced crosswise

1/2 cup Green pepper

--**OR** yellow pepper, chopped

1/2 cup Radishes

--sliced

1/2 cup Cucumber

--peeled and chopped

 

In large bowl, combine vegetable juice, onion, oil, lemon peel and

juice, sugar and dill weed. Stir in remaining ingredients; chill.
