Guest guest Posted April 12, 2002 Report Share Posted April 12, 2002 * Exported from MasterCook * Sushi Rice Salad Recipe By :Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups glutinous or sticky rice 4 1/2 cups water 1/2 tsp. salt 2 tablespoons rice vinegar 1 teaspoon sugar 2 tablespoons tamari soy sauce 1 teaspoon white miso paste 1 teaspoon mirin 1 cup fresh shiitake mushrooms -- stemmed, sliced 1 medium carrot -- cut into long shreds 1 cup fresh bean sprouts 1 cup snow peas -- trimmed and cut into strips 2 tablespoons chopped scallions 1 teaspoon sesame oil Soak the rice for 30 minutes, then drain. Place the rice and 3 1/2 cups of water with 1/2 teaspoon of salt in a covered saucepan and simmer for 15 minutes. Allow to rest for 5 minutes and then remove the rice to a shallow bowl. Set aside and allow to cool at room temperature. In a small saucepan, heat the rice vinegar with the sugar, stirring to dissolve the sugar. Drizzle the vinegar mixture over the cooked rice. Combine 1 cup of water with the tamari, miso paste, and mirin in a saucepan over medium heat, stirring to dissolve the miso. When water is simmering, add the mushrooms and carrots and cook until softened, about 2 minutes. Add the bean sprouts and snow peas and cook about 1 minute longer, or until snow peas turn a bright green. Add the scallions and sesame oil to the vegetables and toss to coat. Remove from heat. Spoon rice into individual bowls and top with the vegetables. Serve at room temperature.
