Louisiana Beans and Rice

Amount Measure Ingredient -- Preparation Method

1 tablespoon safflower oil

1 medium onion -- chopped

1 small green bell pepper -- chopped

2 garlic cloves -- minced

28 ounces canned diced tomatoes -- drained

32 ounces canned kidney beans

1/2 cup water

1 teaspoon file powder

1 teaspoon hot pepper sauce

1 teaspoon dried thyme -- crumbled

1/2 teaspoon salt

1/8 teaspoon cayenne

5 cups hot cooked white rice

 

Heat oil in a large saucepan over medium heat. Add onion, bell pepper, and

garlic, and saute until tender, about ten minutes. Add tomatoes, water, file

powder, hot pepper sauce, thyme, salt, and cayenne. Cover and simmer until

heated through, about 10 minutes. Serve over rice.
