Chili Tacos

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 cup chopped onion

2 jalapenos -- seeded and minced

2 cups vegetarian chili

1/2 cup salsa

8 taco shells or tortillas

1 1/2 cups grated cheddar or soy cheese

1/2 head lettuce -- shredded

2 tomatoes -- diced

 

Heat the oil in a skillet over medium heat. Add the onion and jalapenos, cover,

and cook until softened, about 5 minutes. Add the prepared chili and salsa, and

cook 5 minutes to heat through, stirring occasionally. Spoon the chili mixture

into warmed taco shells or tortillas, and sprinkle with the grated cheese,

lettuce, and tomatoes.
