Guest guest Posted April 12, 2002 Report Share Posted April 12, 2002 * Exported from MasterCook * Orange and Thyme Scented Chili Recipe By :Robin Robertson Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon safflower oil 1 large onion -- chopped 1 red bell pepper -- chopped 1 jalapeno chile pepper -- minced 3 tablespoons chili powder 1 tablespoon minced fresh thyme -- or 1 teaspoon dried 1 teaspoon paprika 1 tablespoon light brown sugar 15 ounces canned diced tomatoes 1 cup hot or mild salsa 3 cups cooked black beans 1 pound cooked vegetarian sausage -- crumbled 1 cup fresh orange juice 2 tablespoons orange flavored liqueur (optional) Garnishes: 1 tablespoon orange zest sour cream orange slices thyme sprigs In a large pot, heat oil and sauté onions, red bell pepper, and jalapeño until softened, about 5 minutes. Stir in chili powder, thyme, paprika, and sugar. Add tomatoes, salsa, beans, and sausage, and simmer for 20 minutes. Add the orange juice, liqueur (if using), and the orange zest, and cook 15 minutes longer, adding a little water if mixture becomes too dry. Serve garnished with sour cream, orange slices, and thyme sprigs.
