Perciatelli and Broccoli Sicilian

Amount Measure Ingredient -- Preparation Method

1 pound broccoli florets

2 teaspoons olive oil

2 cups sliced yellow onion

2 medium garlic cloves -- crushed

4 cups canned whole tomatoes -- including liquid

salt and black pepper -- to taste

1/4 cup raisins

1/4 cup pine nuts

16 pitted green olives -- halved

1 pound perciatelli -- (dry weight)

1/2 cup chopped fresh basil

1/3 cup freshly grated pecorino cheese -- (Romano)

 

1. Place a large, pasta pot with 3 to 4 quarts of water on to boil.

 

2. In a second saucepan, cook broccoli in boiling water for 5 minutes or place

in microwave oven on high for 6 minutes. Drain in a colander and set aside. Heat

oil in large nonstick frying pan on medium heat. Add onion and garlic and saute

until soft, about 5 minutes. Add tomatoes, cutting them in half in the pan with

a spoon. Add salt and pepper to taste. Cover and simmer 15 minutes. Add raisins,

pine nuts, olive and broccoli, cover and simmer 5 minutes more.

 

3. Meanwhile, add pasta to boiling water return to a boil. Cook 11 minutes, or

until pasta is cooked through but firm. Drain in a colander and place in a

serving dish. Pour sauce over pasta and toss well. Chop fresh basil leaves and

mix in. Sprinkle pecorino cheese on top. Serve immediately.

NOTES : Perciatelli is a long, thick, tubular spaghetti. Also called bucatini,

it is heavier than spaghetti: more texture and flavor. If perciatelli is not

available, substitute a tube pasta like ziti, penne or Sedani; or select another

long pasta.
