Indian Lentils with Curried Potatoes

1 tablespoon canola oil

1 large yellow onion -- chopped

3 garlic cloves -- (3 to 4) minced

1 large tomato -- diced

1 tablespoon curry powder

1/2 teaspoon ground cumin

1/2 teaspoon black pepper

1/4 teaspoon ground turmeric

1 cup green lentils -- rinsed

4 1/2 cups water

2 cups diced white potatoes -- (peeled)

1/2 teaspoon salt

 

1, In a medium saucepan, heat the oil over medium heat. Add the onion and garlic

and cook, stirring, for about 5 minutes. Stir in the tomato, curry powder,

cumin, pepper and turmeric and cook for 1 minute. Stir in the lentils and water

and cook over medium heat for 15 minutes, stirring occasionally. Stir in the

potatoes and cook until the lentils and potatoes are tender about 30 minutes,

stirring occasionally. Stir in the salt, remove from the heat and let stand for

5 to 10 minutes.

 

2. Transfer the lentils to a large serving bowl. Serve with Indian flat bread,

pita or flour tortillas.

 

VARIATION: for a touch of heat, add 1 to 2 hot chili peppers, seeded and minced,

while sauteing the onion and garlic.
