jamie, you mentioned provolone! this is good with provolone and a whiff of

ground mace -- I don't use this much butter -- about one fourth this amount...

use spray wherever I can

Tomatoes and Carrots

Amount Measure Ingredient -- Preparation Method

4 tablespoons butter -- divided

2 large white onions -- thinly sliced

1 cup shredded carrots

1 teaspoon salt

Dash freshly ground black pepper

3 large tomatoes -- peeled

2 cups shredded Swiss cheese

1/2 cup fresh bread crumbs

1 teaspoon minced parsley

 

Preheat oven to 350F. In a 12-inch skillet, melt 3 tablespoons of butter over

moderate heat. Add onions and saute until soft but not browned. Add carrots,

salt, and pepper; reduce heat, cover, and cook 2 to 3 minutes.

 

Transfer to a 1 1/2-quart casserole that has been brushed with oil. Wipe out

skillet with paper toweling.

 

Slice tomatoes and layer over carrot and onion mixture. Sprinkle with cheese.

 

In the wiped skillet, melt remaining tablespoon of butter over moderate heat.

Add bread crumbs and parsley, stirring to mix well.

 

Sprinkle bread crumb mixture over cheese and bake 30 minutes.
