Spaghettini with Curry Yogurt Sauce

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter

1 large onion -- finely chopped

1 large garlic clove -- finely chopped

2 teaspoons curry powder -- or to taste

1 tablespoon all-purpose flour

salt and white pepper -- to taste

2 cups plain yogurt -- at room temperature

or 1-cup each yogurt and sour cream

8 ounces spaghettini -- cooked and drained

 

1. In a medium, heavy saucepan melt the butter over moderate heat. Add the onion

and garlic and saute until golden and soft, stirring frequently. Add the curry

powder and cook, stirring, 1/2 minute. Add the flour and salt and pepper and

cook, stirring, to 2 minutes. Stir in the yogurt or yogurt and sour cream and

cook gently just until heated through.

 

2. Place the pasta in a heated serving dish and cover with the curry yogurt

sauce. Toss gently until well coated with the sauce. Serve at once.
