Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 untried... * Exported from MasterCook * Noodles with Yogurt Cream Sauce Recipe By :Sonia Uvezian Serving Size : 4 Preparation Time :0:00 Categories : New Import Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons butter 1/2 cup finely chopped shallots or scallions with green tops 2 tablespoons all-purpose flour 1 cup half-and-half 1 cup plain yogurt -- at room temperature 1/4 teaspoon ground nutmeg -- or to taste salt and white pepper -- to taste 8 ounces spinach noodles -- or medium egg noodles -- cooked and drained freshly grated parmesan cheese 1. In a medium, heavy saucepan melt the butter over moderate heat. Add the shallots or scallions and saute until soft and golden, stirring frequently. Add the flour and cook, stirring, about 2 minutes. Gradually stir in the half-and-half, then the yogurt. Cook over low heat until the sauce is smooth, thickened, and heated through. Add the nutmeg and salt and pepper. Taste and adjust the seasoning. 2. Place the noodles in a heated serving dish and cover with the sauce. Toss gently until well coated with the sauce. Sprinkle with a few spoonfuls of the grated cheese and serve at once, accompanied with a bowl of additional cheese.
