Guest guest Posted April 8, 2002 Report Share Posted April 8, 2002 with citrus and soy * Exported from MasterCook * BBC Zesty Noodle Stir Fry ~V Recipe By :BBC Good Food 2002-04 Serving Size : 4 Preparation Time :0:00 Categories : Lowfat Pasta Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 ounces flat rice noodles 6 tablespoons soy sauce 5 tablespoons orange juice 1/2 teaspoon finely grated orange zest 1 teaspoon sugar 1/2 teaspoon cornstarch 1 tablespoon vegetable or sunflower oil 1/2 tablespoon fresh grated ginger root 2 garlic cloves -- finely chopped 2 tablespoons dry sherry 2 red bell peppers -- seeded and sliced 2 carrots -- peeled, julienned 1 zucchini -- julienned 4 ounces pea pods -- sliced 7 1/2 ounces canned waterchestnuts -- sliced (220g can) 1 bunch spring onions -- shredded 1. Put the noodles in a large bowl, cover with boiling water for 4 minutes, then drain and run the noodles under cold water. 2. Mix soy sauce, orange juice and zest, sugar and cornstarch. Heat the oil in a wok, add ginger and garlic and fry for 1 minute. Add the sherry, peppers and fry for 1 minute. Tip in the carrots, zucchini and peapods and fry for 3 minutes. Stir in the water chestnuts and spring onions, keeping a few onions for garnish. Fry for a minute. 3. Stir in the sauce and noodles until hot. Sprinkle with spring onion.
