Skinny Hoppin' John

Amount Measure Ingredient -- Preparation Method

1 cup dried black-eyed peas

2 large plum tomatoes -- seeded and diced

2 scallions with green tops -- finely chopped

1 rib celery -- finely diced

1/2 cup finely chopped white onion

1 jalapeno or serrano chile

1/2 teaspoon salt

freshly ground pepper

1 teaspoon fresh lime juice

 

Rinse the peas and place in a deep saucepan with 2-1/2 cups cold water. Bring to

a boil and cook until the beans are soft, 45 minutes to 1 hour.

 

Stir in the tomatoes, scallions, celery, onion, chile and salt into the hot

beans. Simmer 25 minutes over medium heat. Season to taste with the pepper. Mix

in the lime juice and serve.

 

Each of the 4 servings contains 100 calories and less than a gram of fat.

NOTES : New Years Tradition: Southerners are famous for eating a New Year's stew

of black-eyed peas and rice called Hoppin' John to bring luck for the rest of

the year. Whether or not you believe the superstition, finishing off a big plate

of this combination of black-eyed peas and rice can be a delicious way to start

the year. Almost every cook who prepares this harbinger of good fortune creates

his or her own version. Although this recipe skips the customary rice and ham or

bacon, its creamy texture and fresh flavor are a real crowd-pleaser.
