Noodle Pancake with Sun Dried Tomatoes, Goat Cheese and Basil

1/2 cup dry-packed sun-dried tomatoes

4 ounces fresh thin chow mein noodles -- see tip

1 large egg white -- beaten

1 teaspoon sesame oil

1 large green onion -- thinly sliced

2 1/2 ounces goat cheese

1/2 teaspoon dried basil

 

1. In a bowl cover sun dried tomatoes with boiling water. Let sit for 15

minutes; drain and chop.

 

2. In a bowl cover noodles with boiling water. Let stand for 5 minutes; drain.

Add egg white, sesame oil, green onion; mix well.

 

3. In a nonstick frying pan sprayed with vegetable spray, cook noodles mixture

over medium-high heat, flattening with a spatula, for 4 minutes or until golden

on bottom. Carefully turn pancake; cook for 3 minutes or until golden. Transfer

to a nonstick baking sheet.

 

4. PREHEAT oven to 400F. In a bowl combine goat cheese, sun-dried tomatoes and

basil; mass with a fork. Spread mixture over pancake. Bake in the preheated oven

for 5 minutes or until cheese melts. Cut into wedges; serve.

 

TIP - Chow mein noodles are thin, yellow wheat noodles made with eggs. They are

available in the refrigerated section of Asian markets and grocery stores. [10-

to 12-oz plastic bags with 3 single servings; or egg noodles with little oil.

May be labeled " instant. " ] Don't confuses these noodles with the deep fried chow

mein sold in packages -- they contain a lot of oil. Be sure to read the labels.
