Soy-Mashed Potatoes

Amount Measure Ingredient -- Preparation Method

2 1/2 quarts water

4 cups white potatoes -- peeled and diced

1/2 cup soy milk -- warmed

1/4 cup fresh parsley -- chopped

1/2 teaspoon white pepper

1/2 teaspoon salt

2 large scallions -- finely chopped

- use green and white parts

 

For this nouveau bowl of mashed potatoes, soy milk makes a nutritious

replacement for heavy cream, milk, and /or butter.

 

Yield: 4 servings

 

In a large saucepan, bring the water to a boil. Add the potatoes and

cook over medium heat until tender, about 20 minutes, stirring

occasionally. Drain in a colander.

 

Transfer the potatoes to a medium mixing bowl. Add the soy milk,

parsley, pepper, and salt to the potatoes and mash with the back of a

large spoon or potato masher until pureed.

 

Transfer to a serving bowl and sprinkle the scallions over the top.

Serve at once.
