Haitian Hot Pot

Amount Measure Ingredient -- Preparation Method

1 tablespoon canola oil

1 medium yellow onion -- diced

1 large green or red bell pepper -- seeded and diced

1 stalk celery -- diced

2 cloves garlic -- minced

1/2 scotch bonnet -- seeded and minced

or 2 large jalapeno chile peppers

8 cups water

2 cups peeled diced butternut squash

or west indian pumpkin

1 large white potato -- peeled and diced

1 medium turnip -- peeled and diced

1 tablespoon dried parsley

1 teaspoon dried thyme

1 teaspoon salt

1/4 teaspoon ground turmeric

15 ounces canned red kidney beans -- drained

 

In a large saucepan, heat the oil over medium heat. Add the onion, bell pepper,

celery, garlic, and chili pepper and cook, stirring, for 5 to 7 minutes. Add the

water, squash, potato, turnip, parsley, thyme, salt, and turmeric and bring to a

simmer over high heat. Reduce the heat to medium-low and cook for about 45

minutes, stirring occasionally. Stir in the beans and cook for about 5 minutes.

To thicken, mash the squash and potatoes against the side of the pan with the

back of a large spoon. Remove the soup from the heat and let stand for about 10

minutes.

 

Ladle the soup into bowls and serve.

 

TIP - Fresh Scotch bonnet peppers are available in well-stocked supermarkets and

Caribbean grocery stores.
