Spring Chard Soup with Smoked Chiles

1/4 pound green garlic, trimmed of roots and all but -- 3

inches of green

stems, preferably, or 3 medium leeks -- white parts

only

3 tablespoons olive oil

1 small white onions -- minced

1 large bunch Swiss chard, trimmed and chopped

1 pound new potatoes, scrubbed and cut into -- 1-inch cubes

2 cups stock

2 dried smoked chiles, such as chipotle or -- ancho,

snipped or

cut into 1-inch cubes

2 teaspoons kosher salt

Black pepper in a mill

 

Cut the green garlic crosswise into small rounds. In a large stockpot over

medium heat, heat the olive oil. Add the onion, ad sauté it for 7 to 8

minutes. Add the green garlic, and sauté it until it wilts, 6 to 7 minutes,

stirring frequently so that it does not brown. Add the chard, cover the pot,

and cook until the chard wilts, about 5 minutes. Add the potatoes, stock,

chiles, and 6 cups water. Bring the soup to a boil reduce the heat, and

simmer until the potatoes are tender, 20 to 30 minutes. Season with salt and

pepper, and serve immediately.
