Spicy Anasazi Beans

Amount Measure Ingredient -- Preparation Method

1 cup anasazi beans

4 cups water

2 garlic cloves -- minced

1 cup onions -- chopped

3/4 cup bell peppers -- chopped

2 chili peppers -- minced

1 teaspoon olive oil

2 cups tomatoes -- chopped

2 tablespoons tomato paste

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon paprika

1 teaspoon turmeric

1/2 teaspoon salt

 

Soak the beans overnight; drain, rinse, and add 4 cups of fresh water. Bring to

a boil, cover, and cook until soft (about 1 hour).

 

In a medium skillet, saute the garlic, onions, and peppers in the olive oil,

stirring frequently to prevent sticking. Cook until the onions and peppers are

soft.

 

Add the tomatoes, tomato paste, spices, and anasazi beans to the skillet, and

cook for 10 minutes. Serve over rice.
