Levin Serving Size : 4 Preparation Time :0:00 Categories : Soups Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 tablespoons olive oil 1 medium sweet or yellow onion -- chopped 2 garlic cloves -- minced or 1 tsp. bottled minced garlic 14 1/2 ounces vegetable broth 19 ounces canned cannellini beans -- drained 1 1/2 teaspoons chopped fresh rosemary (or 1/2 tsp. crushed dried) 1/2 teaspoon freshly ground black pepper 1 large red bell pepper -- roasted 1 large yellow bell pepper -- roasted 1 tablespoon balsamic vinegar HEAT OIL in a large saucepan over medium heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Stir in broth; bring to a boil over high heat. Stir in beans, rosemary and pepper. Reduce heat; simmer uncovered 10 minutes, stirring occasionally. Stir in roasted peppers and vinegar; ladle into shallow bowls. Serve with crusty Italian rolls and a spinach salad. Makes 4 servings. TIP - roast the peppers, peel and julienne. Or buy a jar of roasted peppers, drain and julienne. To roast a pepper, trim, wash, seed and flatten pepper onto a baking sheet or piece of aluminum foil. Place under broiler until pepper is completely charred. Place blackened pepper in a small paper bag, seal and set aside 15 minutes. Remove from bag. Peel charred skin with fingers.
