Guest guest Posted April 3, 2002 Report Share Posted April 3, 2002 * Exported from MasterCook * Fabulous Vegetarian Chili Recipe By :Jay Solomon Serving Size : 6 Preparation Time :0:00 Categories : 150 Vegan Favorites Soups {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 small yellow onion -- diced 1 red bell pepper -- seeded and diced 2 large garlic cloves -- minced 1 large jalapeno or serrano pepper -- seeded and minced 1 cup texture vegetable protein granules 1 cup water 28 ounces canned crushed tomatoes 15 ounces canned red kidney beans -- drained 14 ounces canned stewed tomatoes 1 1/2 tablespoons chili powder 2 teaspoons ground cumin 1/2 teaspoon ground cayenne pepper 1/2 teaspoon salt In a medium saucepan, heat the oil over medium heat. Add the onion, bell pepper, garlic and chili pepper. Cook, stirring, for 5 minutes. Add the textured vegetable protein and water and cook for 5 minutes over medium-low heat, stirring occasionally. Add the crushed tomatoes, beans, stewed tomatoes, chili powder, cumin, cayenne and salt and bring to a simmer over medium-high heat. Reduce the heat to medium-low and cook for about 15 minutes, stirring occasionally. Remove from the heat and ladle the chili into large bowls. Serve with warm corn bread. [The words and anagram.
