The original recipe called for margarine, but I substituted vegetable oil with still-excellent results. You can add anything you like to the mix--I'm going to try mandarin orange segments next time to see if I can emulate the local coffeehouse offerings. Jeannie * Exported from MasterCook Mac * Scones Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Breads Breakfast Quick and Easy Tried and True Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups flour 2 teaspoons baking powder pinch salt 4 tablespoons oil 1/2 cup soy milk 1 tablespoon honey 1/3 cup raisins Preheat the oven to 425F. Mix the dry ingredients together and cut in the oil. Make a well and pour in the soy milk, honey, and raisins. Mix rapidly to form a soft dough. Turn the dough onto a floured board and knead it lightly. The less kneading, the lighter the scone. Form the dough into two ball and press each ball into a flattened mound. Cut each mound into 4 quarters and place on a nonstick baking sheet. Alternatively, roll the dough to 3/4 " thickness and cut with a biscuit cutter. Cut a cross on the top of each scone and place on the baking sheet. Bake the scones for 12-15 minutes until lightly browned.
