This comes from the community recipe exchange on the Weight Watchers website.

It comes from the kitchen of Bobbie70.

 

I haven't yet tried this (maybe tonight!) but I know a couple of other people

who have and they said it was fabulous!

Vegetable kugel 3 pts.

Amount Measure Ingredient -- Preparation Method

2 cups potatoes -- shredded

2 cups carrots -- shredded

2 cups zucchini -- shredded

1 medium onion -- shredded

1/3 cup matzah meal

2 eggs -- beaten

1/2 cup oil

salt -- to taste

pepper -- to taste

 

Preheat oven to 350 degrees. Mix all ingredients together.

 

Bake in greased (or sprayed) baking dish for 45 - 60 minutes.
