I haven't yet tried this (maybe tonight!) but I know a couple of other people who have and they said it was fabulous! Miriam * Exported from MasterCook * Vegetable kugel 3 pts. Recipe By :Bobbie70 Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups potatoes -- shredded 2 cups carrots -- shredded 2 cups zucchini -- shredded 1 medium onion -- shredded 1/3 cup matzah meal 2 eggs -- beaten 1/2 cup oil salt -- to taste pepper -- to taste Preheat oven to 350 degrees. Mix all ingredients together. Bake in greased (or sprayed) baking dish for 45 - 60 minutes.
