Guest guest Posted April 1, 2002 Report Share Posted April 1, 2002 * Exported from MasterCook * Yellow Spice Rice Recipe By :Jay Solomon Serving Size : 4 Preparation Time :0:00 Categories : New Import Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 medium red onion -- diced 1 red bell pepper -- seeded and diced 2 cloves garlic -- minced 1 1/2 teaspoons curry powder 1 teaspoon ground cumin 1/4 teaspoon ground turmeric 1/2 teaspoon salt 1/2 teaspoon black pepper 1 1/2 cups long-grain white rice or basmati rice 3 cups water 15 ounces canned chickpeas -- drained 1/4 cup chopped fresh parsley In a medium saucepan, heat the oil over medium heat. Add the onion, bell pepper, and garlic and cook, stirring, for about 5 minutes. Add the curry powder, cumin, turmeric, salt, and pepper and cook, stirring, for 30 seconds. Stir in the rice and water and bring to a simmer over medium-high heat. Reduce the heat to medium-low, stir in the chick-peas, and cover. Cook until the rice is tender, 15 to 20 minutes. Remove from the heat, fluff the rice, and fold in the parsley. Let stand for 5 to 10 minutes before serving.
