Guest guest Posted March 31, 2002 Report Share Posted March 31, 2002 * Exported from MasterCook * Cherry Tomato Salsa Recipe By : California Home Cooking by Michele Anna Jordan Serving Size : 1 Preparation Time :0:00 Categories : Salsas Sda-Veg-Recipes2 (AT) Egroups (DOT) Com Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup yellow currant or small yellow -- cherry tomatoes 1 cup small orange cherry tomatoes, such as -- Sungolds 1 cup red currant or small cherry tomatoes, such -- as Sweet 100's 1 to 2 jalapenos, seeded and minced 1 small red onions -- diced 2 tablespoons fresh lime juice (from 1 to 2 limes) 1/4 cup extra virgin olive oil 1 tablespoon minced basil leaves 1 tablespoon minced cilantro leaves Kosher salt Black Pepper in a mill Cut the currant tomatoes in half and the cherry tomatoes into quarters. Toss the tomatoes in a medium bowl. Add the jalapeno, using 2 for more heat, and the onion, lime juice, olive oil, basil, and cilantro, and toss again. Taste, and add salt and pepper. Let the salsa rest at room temperature for at least 30 minutes before serving.
