Guest guest Posted April 1, 2002 Report Share Posted April 1, 2002 xpost * Exported from MasterCook * Pumpkin Hominy Muffins with Adzuki Beans Recipe By :Jay Solomon Serving Size : 12 Preparation Time :0:00 Categories : Muffins New Import {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup canned hominy -- drained 1 cup cooked or canned adzuki beans -- drained 1/2 cup butter -- softened 1/2 cup brown sugar -- firmly packed 1/2 cup granulated sugar 2 eggs 1 1/2 cups cooked mashed pumpkin 1/2 cup buttermilk 2 cups unbleached flour 1 tablespoon baking powder 1 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg or allspice 1/2 teaspoon baking soda Preheat the oven to 375F Place the hominy and beans into a food processor fitted with a steel blade and process for 10 seconds. Set aside. In a mixing bowl, blend the butter and sugars until creamy. Beat in the eggs one at a time, until the mixture is fluffy. Blend in the hominy mixture, pumpkin, and buttermilk and mix well. Mix the dry ingredients in a separate bowl and then gently fold into pumpkin batter. Scoop the batter into large, greased muffin tins. Bake for about 20 minutes or until a toothpick inserted in the center of the muffins comes out clean.
