Pumpkin Hominy Muffins with Adzuki Beans

Amount Measure Ingredient -- Preparation Method

1 cup canned hominy -- drained

1 cup cooked or canned adzuki beans -- drained

1/2 cup butter -- softened

1/2 cup brown sugar -- firmly packed

1/2 cup granulated sugar

2 eggs

1 1/2 cups cooked mashed pumpkin

1/2 cup buttermilk

2 cups unbleached flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg or allspice

1/2 teaspoon baking soda

 

Preheat the oven to 375F

 

Place the hominy and beans into a food processor fitted with a steel blade and

process for 10 seconds. Set aside.

 

In a mixing bowl, blend the butter and sugars until creamy. Beat in the eggs one

at a time, until the mixture is fluffy. Blend in the hominy mixture, pumpkin,

and buttermilk and mix well.

 

Mix the dry ingredients in a separate bowl and then gently fold into pumpkin

batter. Scoop the batter into large, greased muffin tins.

 

Bake for about 20 minutes or until a toothpick inserted in the center of the

muffins comes out clean. Remove from the pan after 10 minutes and let cool on a

rack.

NOTES : Once upon a time Jay owned a muffin shop. " I had many moments to

contemplate all of the different varieties of muffins in the universe. I am not

sure what inspired this combination, but it proved to be a winner. It has a flat

appearance, like an English muffin. "
