Guest guest Posted April 1, 2002 Report Share Posted April 1, 2002 * Exported from MasterCook * Pina Colada Rice Pudding Recipe By :Jay Solomon Serving Size : 6 Preparation Time :0:00 Categories : New Import Rice {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups cooked white or brown rice 1 cup canned coconut milk 15 ounces canned diced pineapple -- with liquid 1/2 cup brown or white sugar 1/4 cup dark raisins 3 tablespoons dark rum 1/2 teaspoon ground nutmeg In a medium saucepan, combine the rice, coconut milk, pineapple and liquid, sugar, raisins, and rum. Cook for 10 to 12 minutes over medium-low heat, stirring frequently. Remove from the heat and let cool slightly. Chill for at least 1 hour before serving. When ready to serve, spoon the pudding into bowls and sprinkle some of the nutmeg over each bowl. If desired, garnish each with a swizzle stick.
