Hominy and Pinto Bean Salad

1 can hominy -- (15-ounce) rinsed and drained

1 1/2 cups cooked pinto beans

1/2 green bell pepper -- chopped

1/4 cup chopped sweet red onion

1/2 cup chopped celery

1 can V8 juice -- (5.5 ounce)

1/2 teaspoon chili powder

1/2 teaspoon ground cumin

1/4 teaspoon dried oregano

2 tablespoons red wine vinegar

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper

 

V8 Juice adds lots of flavor but no fat to this delicious combination of hominy

and pinto beans.

 

Combine all the ingredients in a bowl and toss to mix. Let stand for at least 30

minutes to allow the flavors to blend, Serve at room temperature.
