Guest guest Posted April 1, 2002 Report Share Posted April 1, 2002 I did some experimenting over the last few days and found that the recipe that I posted last week for Passover Popovers, also works really well made into rolls. Because they use only half the amount of matzah meal, but the same number of eggs, they are much lighter than the rolls that come from the " normal " recipe. The batter is a bit messier to work with when shaping the rolls, because it's " looser, " but it's manageable. After the first batch, which I made using the regular recipe, substituting cake meal for half the matzah meal (I found that this didn't really make the rolls any lighter,) I've been using the popover recipe. Otherwise, the ingredients and procedures are the same.
