I made this the other night for dinner. It was really good and easy. I adapted

it from Vegetarian Times, don't remember which issue.

Saucey Italian Noodles

Pasta

 

Amount Measure Ingredient -- Preparation Method

1 lb dried pasta -- in fun shape

1/2 cup onion -- diced

2 lg cloves garlic -- sliced

1/2 cup cremini mushrooms -- sliced thin

1 15 oz can Hunts Diced Tomatoes for Pasta

1 cup tomato puree

2 tsp dried oregano -- crumbled

2 tbsp fresh parsley -- chopped

salt and pepper -- to taste

Garnish:

sprinkle parmesan cheese

 

For sauce:

 

In a large saucepan over medium heat, saute onion, garlic and mushrooms until

they start to soften, about 5 minutes. Add canned tomatoes, tomato puree,

oregano, parsley, salt and pepper. Cook over medium heat for 7 minutes until all

vegetables are tender and sauce is thickened a bit.

 

For pasta:

 

Place a large pot of water to a boil. When it boils, add some salt (1 tsp per

quart), and the pasta. Swirl the pasta around and cover pot. Let boil according

to package directions. Drain well.

 

To serve:

 

Add 2 ladlefuls of pasta cooking water to sauce (if too thick) and mix well.

Place sauce in bottom of large serving bowl. Top with pasta and mix well. Top

with parmesan cheese.

 

Serve with warmed bread or breadsticks.
