Someone asked me to post a recipe for cake if I found one...I can't

remember her name. Sorry it took me so long. This cake is very good

vegan cake...

GERMAN CAROB CAKE

3 c. flour ( I use whole wheat pastry flour)

1/2 c. honey

1/2 c. sugar cane crystals (sucant)

1/4 c. water

1 tsp. vanilla

1 Tbsp. featherweight (which is a baking powder without the alumimum

in it)

1/2 c. carob powder

1 tsp. salt

1/2 c. cold pressed oil ( I se nothing but light olive oil in

everything doesn't change the flavor)

2 tsp. lemon juice

2 c. cold water

Heat oven at 350 degrees. Mix all dry ingred together except the

featherweight. Then mix all the liquids together. Add the liquid to

the dry. Whip with electric mixer 1 minute. Add featherweight and whip

very well. Pour into 9 by 13 cake pan and bake for 40 minutes or until

tooth pick inserted comes out clean. Frost with German Carob

Frosting

 

GERMAN CAROB CAKE FROSTING

1 CUPE PURE MAPLE SYRUP

1/2 C. WATER

1/2 TSP SALT

2 TSP. VANILLA

1 C. COCONUT

1 C. PECANS

2 TBSP CLEAR -JEL

Blend together everything but the coconut and pecans. Put them in a

bowl (you may roast them if you want to) If you want to roast them in

the oven 350 and watch VERY carefully 5 minutes maybe. Add the maple

syrup mixture and mix well.

 

For cupcakes I half the frosting recipe.
