I love springtime! ~ Brenda (PS: I see this recipe has been out since 1999...so we may already have this in our collection...) * Exported from MasterCook * Farfalle With Grilled Asparagus and Lemon Recipe By :Kelly Watts in Milwaukee Journal Sentinel, April 1999 Serving Size : 4 Preparation Time :0:00 Categories : Asparagus Grill Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lemon 2 tablespoons olive oil 1 clove garlic -- minced salt and pepper 1 pound asparagus -- trimmed 1 yellow or orange bell pepper -- cut into 1/2-inch slices 3/4 pound farfalle pasta -- (butterfly) 2 ounces parmesan cheese -- shaved with peeler Halve and juice lemon, discarding seeds; finely grate lemon zest. Combine juice, zest, oil and garlic with salt and pepper to taste. Add vegetables and toss to coat. Marinate at least 30 minutes or overnight. Cook pasta according to package directions. Preheat grill. Grill vegetables, reserving the marinade [from step #1], over medium-high heat until beginning to brown, turning asparagus frequently, about 5 minutes total. Toss drained pasta with reserved marinade and season with salt and pepper. Place vegetables over pasta, and top with Parmesan. Serve immediately. Makes 4 servings. Per serving: 494 calories, 77g carbohydrates, 20g protein, 13g total fat (4g saturated), 11mg cholesterol, 6g fiber, 267mg sodium.
